Chocolate Zucchini Brownie

Chocolate Zucchini BrownieIngredients

  • 2 ¼ cups all purpose flour
  • ½ cups unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ¾ cups sugar
  • ½ cup butter (room temperature)
  • ½ cup vegetable oil
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ½ cup buttermilk
  • 2 cups grated unpealed zucchini
  •  6 ounces semi-sweet chocolate chips
  • ¾ cup chopped walnuts (optional)

Preparation

  1. Preheat oven to 325. 
  2. Butter and flour a 9x13 pan. 
  3. Cream together sugar, butter and oil. 
  4. Sift together flour, cocoa powder, baking soda & salt. 
  5. Add dry ingredients to sugar & butter mixture.  Mix well. 
  6. Add eggs one at a time, beating well after each addition. 
  7. Add milk & vanilla. 
  8. Stir in zucchini, chocolate chips and nuts. 
  9. Bake 50 minutes or until a toothpick comes out clean. 
  10. Cool, cut and serve. 

Garnish with whipped topping and a sprinkle of nuts or additional chips and a sprig of fresh mint.
