Cherry Gelatin Salad

Better Homes and Gardens magazine, August 1969.   This is an oldie but goodie from my moms recipe box.

Ingredients 

  • 1 package (3 ounces) raspberry gelatin (I use black cherry rather than the raspberry)
  • 1 cup boiling water
  • 1 can (21 ounces) cherry pie filling
  • 1 package (3 ounces) lemon gelatin 
  • 1 cup boiling water
  • 1 package (3 ounces) cream cheese, softened
  • 1/3 cup mayonnaise or salad dressing (I use the salad dressing it’s sweeter than the mayo).
  • 1 can (8-3/4 ounces) crushed pineapple, undrained
  • 1 cup frozen whipped topping, thawed
  • 1 cup minature marshmallows

Preparations

  1. Dissolve raspberry gelatin in 1 cup boiling water. 
  2. Stir in pie filling.
  3. Pour into a 9x9x2-inch dish. 
  4. Partially chill.
  5. Dissolve lemon gelatin in 1 cup boiling water. Set aside.
  6. Beat together the cream cheese and mayonnaise or salad dressing. 
  7. Gradually add lemon gelatin. 
  8. Stir in undrained crushed pineapple. 
  9. Fold in whipped topping and marshmallows. 
  10. Spread over cherry layer and chill.

As pretty as it is good.  An Evans’ family favorite.
