CHOCOLATE ZUCCHINI CAKE

Ingredients:
2 ¼ cups all purpose flour
½ cups unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 ¾ cups sugar
½ cup butter (room temperature)
½ cup vegetable oil
2 large eggs
½ teaspoon vanilla extract
½ cup buttermilk
2 cups grated unpealed zucchini
6 ounces semi-sweet chocolate chips
¾ cup chopped walnuts (optional)
Directions:
- Preheat oven to 325.
- Butter and flour a 9x13 pan.
- Cream together sugar, butter and oil.
- Sift together flour, cocoa powder, baking soda & salt.
- Add dry ingredients to sugar & butter mixture. Mix well.
- Add eggs one at a time, beating well after each addition.
- Add milk & vanilla.
- Stir in zucchini, chocolate chips and nuts.
- Bake 50 minutes or until a toothpick comes out clean.
- Cool, cut and serve. Garnish with whipped topping and a sprinkle of nuts or additional chips and a sprig of fresh mint.
