CHOCOLATE ZUCCHINI CAKE


 

 CHOCOLATE ZUCCHINI CAKE

Ingredients:

2 ¼ cups all purpose flour
½ cups unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 ¾ cups sugar
½ cup butter (room temperature)
½ cup vegetable oil
2 large eggs
½ teaspoon vanilla extract
½ cup buttermilk
2 cups grated unpealed zucchini
 6 ounces semi-sweet chocolate chips
¾ cup chopped walnuts (optional)

 

Directions:

  1. Preheat oven to 325.
  2. Butter and flour a 9x13 pan.
  3. Cream together sugar, butter and oil.
  4. Sift together flour, cocoa powder, baking soda & salt.
  5. Add dry ingredients to sugar & butter mixture.  Mix well.
  6. Add eggs one at a time, beating well after each addition.
  7. Add milk & vanilla.
  8. Stir in zucchini, chocolate chips and nuts.
  9. Bake 50 minutes or until a toothpick comes out clean.
  10. Cool, cut and serve.  Garnish with whipped topping and a sprinkle of nuts or additional chips and a sprig of fresh mint.
