Original Paczki Recipe


*All ingredients should be at room temperature before beginning!paczki

 

  1. Dissolve 3/4 ounce yeast in 1/4 cup warm water.
  2. Warm 1/2 quart milk, add to the yeast and warm water.
  3. Add 3 cups of all-purpose flower.  Mix to incorporate.
  4. Let rise for about 1/2 hour to create what is called a "sponge".
  5. Mix together the following ingredients:
    • 1/2 quart warm milk
    • 1/4 lb. butter
    • 2 tablespoons shortening
    • 1/2 cup sugar
    • 2 tablespoons whiskey (optional)
  6. To the sponge add the following:
    • 6 eggs
    • Pinch of salt
    • 9 cups all-purpose flour
  7. Again mix to incorporate about 3-4 minutes until you get a good elastic dough.
  8. Let the dough rest until it has doubled in size.
  9. Cut and divide the dough into 2-ounce pieces and form balls.
  10. Place the dough ball on a well oiled flat pan; Cover with loose plastic and let rise for 30 - 45 minutes in a warm environment.
  11. Fry dough balls in 350-degree oil until well browned on both sides then put them on a paper or wire rack to remove excess frying oil.
  12. Let cool.
  13. Using a pastry bag with a tip that has a hole about 1/4" fill each paczki with your favorite jams, jellies or custard.
  14. Roll each paczki in either granulated or powdered sugar or ice with your favorite glaze.

This recipe yields 4 dozen Paczki's.
